Six bespoke cocktails have been developed for Darnley’s View Spiced Gin by world-renowned mixologist Jason Scott, owner of the award-winning Edinburgh bars Bramble and The Last Word Saloon.




Mary Queen of Scots

 

Red Snapper

Ingredients

50ml Darnley’s Spiced Gin
75ml tomato juice
12.5ml freshly squeezed orange juice
Juice half lime
3 dashes Tabasco (to taste)
2 teaspoons Worcestershire Sauce
2 grinds cracked black pepper
2 teaspoons fino sherry
celery salt

Method

Run a lime wedge around the rim of the glass and then dip the wet rim into the celery salt. Fill the glass with cubed ice then pour in Darnley’s Spiced Gin, tomato, lime and orange juices and the Tabasco and Worcestershire sauces. Float sherry on top and grind black pepper over top too.

Ginger Ale

Ingredients

50 ml Darnley’s View Spiced Gin
Ginger Ale
Lime

Glass

Hi Ball

 

 

Method

Build all ingredients in a glass over cubed ice.

Garnish

3 lime wedges squeezed

Hot Punch

Ingredients

250ml Darnley’s View Spiced Gin
500ml organic apple cider
750ml ginger beer
100g Demerara sugar
1 split vanilla pod
1 cinnamon quill
100ml freshly squeezed lime juice
Apple rounds (cored)
Juniper berries

Glass

Punch glass (heat resistant)

 

 

Method

Pour all ingredients into a pot and simmer until the sugar has dissolved. Leave on the heat for another 5 minutes. Serve warm.

Apple wedge studded with cloves

Ginger Martini

Ingredients

60ml Darnley’s View Spiced Gin
1 knob ginger
15ml sugar syrup

Method

Muddle ginger in the bottom of the shaker. Add remaining ingredients and fill with cubed ice. Shake rapidly and double strain into glass.

Slither of ginger

East India Daisy

Ingredients

37.5ml Darnley’s View Spiced Gin
50ml Knops IPA
12.5ml freshly squeezed lemon juice
12.5ml freshly squeezed orange juice
12.5ml grenadine (home-made)
Soda

Glass

Pewter Mug

 

 

Method

Pour all ingredients (except soda) into a shaker over cubed ice and shake rapidly. Single strain into glass over crushed ice. Charge with soda.

Garnish

Stem of red currants, bramble, orange wedge

Atta Boy

Ingredients

50ml Darnley’s View Spiced Gin
12.5ml Noilly Prat Dry Vermouth
1-2 bar spoons grenadine (home-made)
1 bar spoon Angostura Orange bitters

Method

Over blocked ice, stir ingredients down until well chilled and slightly diluted. Single strain in to glass.
