Botanicals

These bespoke cocktails have been developed for Darnley’s View by some local Edinburgh bartenders including world-renowned mixologist Jason Scott, owner of the award-winning Edinburgh bars Bramble and The Last Word Saloon. The cocktails aim to bring out the natural flavours of the key botanicals in Darnley’s View, especially the citrus and elderflower.




The Lord Darnley

 

French 75

Ingredients

45 ml Darnley’s View
15ml Lemon juice
7.5ml Sugar syrup
Top up with Champagne

Method

Shake the gin, lemon juice and sugar syrup with cubed ice. Strain into a chilled champagne flute and top with Champagne.

Ingredients

50 ml Darnley’s View
dash Elderflower Cordial
dash Fevertree Tonic Water
dash Limoncello
dash Angostura Bitters

Glass

Champagne Saucer

 

 

Method

In a mixing glass filled with cubed ice, add the Elderflower, Tonic, Limoncello and Bitters coating the ice. Stir and drain off any excess liquid. Add the Gin and stir until well chilled and suitably diluted. Double strain into glass straight up.

Raspberry Gin Fizz

Ingredients

50 ml Darnley’s View
handful of raspberries
10ml Lime juice
20ml Sugar syrup
Soda water




Glass

Method

In a cocktail shaker, add the raspberries and muddle with the back of a wooden spoon, or
similar.

Add ice, then pour in the gin, sugar syrup and lime juice. Shake. Strain into a glass with ice, and top with soda water.

Darnley's Delight

Ingredients

50 ml Darnley’s View
50 ml Pineapple Juice
12.5 ml Noilly Prat Dry Vermouth
dash Gomme
Angostura Bitters
dash pasteurised egg white

Glass

Method

Pour all ingredients into a shaker over ice and shake rapidly. Double strain into glass.

Garnish

3 drops Angostura Bitters





The Lord Darnley

 

Strawberry Ramos Gin Fizz

Ingredients

50 ml Darnley’s View
15ml Lemon juice
15ml Lime juice
Cordia
handful of strawberries
25ml double cream
1 egg white
soda water

Glass

Tall glass

 

 

Method

Combine all ingredients except the ice and soda in a cocktail shaker and shake vigorously for 1 minute. Then add ice to shaker and shake a further minute. Strain into a tall chilled glass and top up with soda.

Dash of strawberry syrup

50 ml Darnley’s View
12.5 ml Lemon Juice
12.5 ml Elderflower Cordial
Dash Gomme Syrup
Bitter Lemon

Method

Place all ingredients (except bitter lemon) into a shaker and fill with ice. Shake vigorously. Single strain into glass over cubed ice and top with bitter lemon.
